"Pasta is such a quick, simple dish to make for a weeknight supper. I came up with this recipe based on a few ingredients I had in the fridge. You can adapt it to however you want, adding more greens, herbs and vegetables. The thick pasta fettuccine ribbons are delicious and stick to the watercress sauce perfectly. Nutritious, healthy meals don’t have to be complicated; you don’t need a million ingredients to make something taste delicious. This pasta is nourishing and comforting for when you get home from work, it will be ready in ten minutes."

Watercress Fettuccine

Ingredients

Fettuccine Pasta

Lemon

2 Garlic Cloves

4 Tbsp of Olive Oil

1 Pack of Watercress

Salt and Pepper

Method

  1. Place the watercress, lemon, garlic, olive oil, salt and pepper into a high-speed blender and pulse until combined.

  2. Put the fettuccine into some salted boiling water and cook per packet instructions.

  3. Add the watercress pesto to the pasta and stir in. Drizzle with olive oil, season with salt and pepper and spoon into bowls.
