"Pesto Pasta is a household staple and a great quick go-to lunch or dinner. This homemade pesto is vegan and the pasta is gluten free. The avocado replaces parmesan to make a dairy free alternative and adds a healthy dose of essential fatty acids. You can add a variety of colourful vegetables such as aubergine, sun dried tomatoes or kale to increase your vegetable intake. I like to serve mine with a side of green leafy salad and a classic French vinaigrette!"

Pea Pasta with Rocket Pesto

(GF), (DF), (VE)

Serves 2

Ingredients

Pea Pasta

For the Pesto

2 Cups of Rocket

½ Cup of Pine Nuts

3 Tbsp of Olive Oil

½ Avocado

1 Lemon

Sea Salt & Pepper

Basil

Method

  1. Place all of the pesto ingredients into a blender and pulse until combined.

  2. Cook the pasta as per instructions

  3. Drain the pasta, drizzle with olive oil, salt and pepper and stir in the rocket pesto.

  4. Serve with a side of greens or a fresh salad
