"Pesto Pasta is a household staple and a great quick go-to lunch or dinner. This homemade pesto is vegan and the pasta is gluten free. The avocado replaces parmesan to make a dairy free alternative and adds a healthy dose of essential fatty acids. You can add a variety of colourful vegetables such as aubergine, sun dried tomatoes or kale to increase your vegetable intake. I like to serve mine with a side of green leafy salad and a classic French vinaigrette!"
Pea Pasta with Rocket Pesto
(GF), (DF), (VE)
For the Pesto
2 Cups of Rocket
½ Cup of Pine Nuts
3 Tbsp of Olive Oil
Sea Salt & Pepper
Place all of the pesto ingredients into a blender and pulse until combined.
Cook the pasta as per instructions
Drain the pasta, drizzle with olive oil, salt and pepper and stir in the rocket pesto.
Serve with a side of greens or a fresh salad
