' This is a really simple, healthy salad that is perfect for lunch! It only takes 15minutes to prepare and you can adapt the ingredients to what you have at home. The crispy halloumi goes so well with the spicy harrisa paste and the creamy butter beans. You can serve alongside homemade soda bread, sourdough or serves as a side dish to your evening meal. It is the perfect spring/summer lunch to have in the garden or equally delicious at your desk on a Monday afternoon! Enjoy! ' 

Halloumi & Butterbean Salad

Serves 2

Ingredients

1 Tin of Butterbeans

1 Pack of Halloumi Cheese

1 Tsp of Harrisa Paste

1/2 A Cucumber 

1 Tbsp of Apple Cider Vinegar

1 Tbsp of Caster Sugar 

Pinch of Sea Salt & Pepper

1 Tbsp of Olive Oli

1 Tsp of Maple Syrup 

Bunch of Herbs 

2 Tbsp of Tahini 


Method

  1. First slice the cucumber and place into a small bowl with the apple cider vinegar, caster sugar and sea salt. Stir together and leave on the side. 

  2. Slice the halloumi and heat the olive oil in a non-stick pan on a medium heat. Drain the butter beans and rinse them and place into another small bowl, stir in the harrissa paste, maple syrup, a dash of olive oil, salt and pepper. 

  3. Pan fry the halloumi until it is golden brown and place into a serving dish. Top with the pickled cucumbers and harrissa butter beans. Drizzle with the remaining pickle liquid and any of the harrisa oil left in the bottom of the bowl. Sprinkle over the top some herbs, pepper, and drizzle over the tahini. 

  4. Serve with Sourdough bread or as a side dish to you evening meal.
