' This pasta is super simple and quick to make and the perfect, veggie mid-week meal! It is full of healthy vegetables and goes perfectly with a big fresh, green salad. You can also adapt the recipe and add any other vegetables you have to hand, you can also add herbs off choice. It is comforting, nourishing and a delicious quick dinner'. 

Cauliflower Orzo Pasta

Serves 2

Ingredients

1/2 Pack of Orzo Pasta

1 Small Cauliflower 

1 Pack of Spinach 

1 Garlic Clove

Juice of 1 Lemon 

2 Tbsp Cream Fraiche 

1 Tsp Chilli Flakes

2 Tbsp Olive Oil 

Salt & Pepper

Parmesan Cheese to Serve 

Method

  1. First cook the pasta to packet instructions. 

  2. Chop the cauliflower into small florets and finely chop the garlic. 

  3. In a non-stick pan heat 1 Tbsp of olive oil and add the cauliflower florets and the cumin seeds. Once the cauliflower has started to brown and soften, stir in the spinach, sliced garlic, salt and pepper. Stir all together until the spinach has wilted. Then take the cauliflower off the heat and stir in the cream fraiche, chilli and lemon juice. Season again to taste. 

  4. Drain the orzo pasta and place into a large serving bowl, drizzle with olive oil and top with the caulifower and spinach. Grate the parmesan over the top and serve!
